Apple juice is one of the most popular fruit juices in Germany. 8.5 litres of apple juice were drunk per person on average in Germany in 2009. Apple juice is not only good for quenching thirst, but is also a valuable source of minerals and vitamins. In addition to potassium, calcium and magnesium, it also contains provitamin A in particular. It can be diluted with mineral water to produce a natural fitness drink and source of energy that is the equal of any sports drink.
Roughly 1,5 kg apples are required to produce one litre of apple juice.
Fruit juice is a product of Nature and this is also reflected in the completely natural manner in which it is produced. The quality of the apples is established first of all when delivered to the processing plants. They are then washed and sorted before being transferred to the mill where they are mashed. The next stage in the process is to extract the apple juice from the mash in large fruit presses. This produces the cloudy apple juice containing apple pulp which is particularly popular today. The juice must be centrifuged and filtered if clear apple juice is required.
Like all other fruit juices, apple juice is preserved exclusively by physical means, namely pasteurization: it is heated to approx. 80°C for a few seconds. |
